Ingredients List
- 1 whole chicken
- 2 15-ounce cans coconut milk
- ½ cup chopped fresh cilantro
- 1 tablespoon ginger
- 1 teaspoon coriander
- 1 teaspoon ginger
- ½ teaspoon sea salt
- ½ teaspoon garlic salt
- ½ teaspoon curry
- 2 tablespoons lime juice
- Pepper as desired
Method
Add the lime juice and coconut milk to the slow cooker, and then stir. In a bowl, mix the spices, and then rub them on the chicken. Add the chicken to the slow cooker, and top with the cilantro. Set the cooker to high for 3 to 4 hours or low for 6 to 8 hours. Remove the chicken, and pull the meat from the bones, Return the meat to the slow cooker, and keep it warm until serving. Serve over riced cauliflower, brown rice, or couscous.
